Meet King RiverGood to know.
Where do you deliver?
Brisbane, Moreton Bay south to Caboolture, and the Gold Coast. Brisbane on Monday and Friday, Gold Coast on Monday. Delivery is free. You pick your delivery day at checkout, and any extras ride on the same run.
Is it frozen?
Yes. Every piece is vacuum sealed and snap frozen at its freshest, and arrives frozen. Thaw in the fridge overnight, never on the bench.
What does the marble score mean?
AUS-MEAT grades the fat through the muscle on every carcass, 0 to 9+. MB 4-5 is the middle of the scale: enough marbling to baste itself on the heat, not so much that it eats like butter. The eye fillet is MB 0-3, the leaner end.
How do I cook the tomahawk?
Room temperature first. Sear hard on both sides, then finish low in the oven or off the direct heat on the barbecue to 52 to 54 degrees inside. Rest ten minutes. Slice off the bone and across the grain.
Why only one box?
King River comes to us by the carton and most of it goes to the market stall. This is the one box we have put aside this round. When it sells, it is gone until the next order.
Will the weights match exactly?
No. Pieces are cut by hand, so each lands a little over or under the weight listed. You are charged the box price regardless.
