How the price works

• Pay the $400 deposit now. It holds your share.
• We call you to plan the cuts: steaks, roasts, mince and sausages the way your family eats.
• The carcase is weighed on the hook at the abattoir. That is the hot standard carcase weight (HSCW): the weight before it is chilled, boned out and cut. You pay $22/kg on your share of that weight. Your share usually hangs 250 to 300 kg, so about $5,500 to $6,600 all up.
• We send you the final amount with our bank details. Pay the balance, less your deposit, by bank transfer before delivery.
• You end up with about 150 to 210 kg of packed beef. Packed weight runs 30 to 40% under hanging weight. Bone-in cuts keep more in the box.
