Cut OverviewAbout This Cut

Chuck is cut from the shoulder. It is a hard-working muscle with abundant connective tissue, which breaks down into gelatin during long, slow cooking to create a rich, tender finish.

Tip: Chuck needs time. Anything under 2 hours and it will still be tough. Set it and forget it.
